We’re a couple of “poor boys” born and raised in Baton Rouge, bringing authentic po’boys and Cajun fare to Denver.
When we go home to Louisiana, it’s not gumbo, jambalaya, or the other Cajun dishes everyone knows that we crave most. What we crave are po’boys. And we know it’s not just us—just about every Louisianian we talk to says the same thing. So, to satisfy our own cravings and bring a little taste of home to Denver, we opened Poor Boys: Louisiana Po’boys & Kitchen.

The name “po’boy” dates back to the 1920s, when the sandwiches became associated with feeding striking New Orleans streetcar workers—the “poor boys.” They were inexpensive, filling, and made with whatever ingredients were readily available. One story even suggests the original sandwiches were filled simply with potatoes and gravy.
We try to carry that same spirit into Poor Boys: keeping prices accessible, portions plentiful, and ingredients local whenever possible. We work with Colorado producers including Switch Gears Farm for pickling cucumbers and slicing tomatoes, Croft Family Farm for green tomatoes, and Miraflora Wagyu for our roast beef. For ingredients that are distinctly Louisiana, we go straight to the source. Much of our seafood—including oysters, crawfish, and catfish—is brought in from Louisiana, both to support producers back home and to keep the food tasting the way we remember it.
Poor Boys is currently popping up at The Source Market Hall through September 2026.
