When we go home to Louisiana, it isn't gumbo or jambalaya that we miss most. It's po'boys. And we're not alone. Almost every Louisianian we know says the same thing. So, to satisfy our own cravings and bring a little taste of home to Denver, we opened Poor Boys: Louisiana Po’boys & Kitchen.
The po'boy has been a Louisiana staple since the 1920s, when these hearty sandwiches were made to feed striking New Orleans streetcar workers, the "poor boys." They were simple, filling, and built from whatever fresh ingredients were on hand.

We try to carry that same spirit at Poor Boys by serving generous portions, keeping prices approachable, and using quality ingredients. Whenever we can, we source locally from Colorado farms like Switch Gears Farm, Croft Family Farm, and Miraflora Wagyu. For the seafood that makes Louisiana food what it is, we bring them straight from the Gulf, both to support producers back home and to keep the food tasting the way we remember it.
Poor Boys is currently popping up at The Source Market Hall through September 2026.

Po'Boys
Crispy fried cornmeal crusted catfish belly fillet smothered with Green Chile Crawfish Etouffee in a vietnamese french bread. Dressed with lettuce, tomatoes, pickles, and mayo. Substitute with classic Etouffee for "Atchafalaya" style.
Sides
5pc cornmeal crusted and fried catfish belly nuggets. Served with a side of your choice of Mardi Gras Mustard, Remoulade Sauce, or Poor Boys sauce.
